Zusammenfassung
The presented study is devoted to the significance of physical characters of barley caryopses and grains of malt for their utilization in the prediction of technological quality. In the study, older and new, subjective and objective methods of the assessment of physical characters of caryopses or malt are described. Needed instrumentation is also mentioned. In the first part of the study, physical methods used for the assessment of barley caryopses and grains of malt are summed up, attention is paid mainly to mechanical characters. The other part is focused on the study of the effect of the structure and chemical composition of a barley caryopsis or malt grain for milling energy. The presented study is devoted to the significance of physical characters of barley caryopses and grains of malt for their utilization in the prediction of technological quality.
